How to make tortillas from coconut flour
When it comes to making low-carb tortillas, we've tried most different low-carb flours, from almond flour to oat fiber to ground flax meal. Nothing has worked like coconut flour, and because it is so absorbent, no flour is needed to make the batter. Coconut flour also creates a tortilla-like texture and gives very little flavor, except for the spices you add to the tortilla dough. With the rise of my nut allergy, we've introduced more and more coconut flour recipes and it's now our favorite flour to cook and bake with. As an added bonus, coconut flour is gluten-free.
Ingredients
- 8 large Egg Whites
- 1/3 cup Coconut flour
- 10 tbsp Water
- 1/4 tsp Baking powder
- 1/4 tsp garlic powder
- 1/4 tsp Onion powder
- 1/4 tsp chili powder
- 1/4 tsp Pink Himalayan Salt
Instructions
- Add egg whites, coconut flour, baking powder, and water in a bowl. Mix well (it should be a homogeneous watery mixture).
- Optional: add seasonings and mix.
- Heat a skillet (whatever size you want the tortilla to be) over low heat. Wait until the pan is hot, spray it with cooking spray, and spoon some of the batters into the center (I like to use a 1/4 measuring cup).
- Tilt the pan as quickly as possible on all edges to spread the batter as thinly as possible. You can always add more in areas not covered.
- Let it cook for a few minutes until it starts to rise/bubble or you lift it and the other side turns brown. Flip and cook for an additional minute.
- Repeat the process until all of the mixtures are cooked. The mixture above made 16 small, taco-sized tortillas for us.
Tip: If the first tortilla doesn't spread thin enough on the pan (it looks more like a pancake), add more water to the egg-white mixture and mix!
