Ingredients

  • Toppings of your choice (we used pancetta, chopped chipolatas, and finely chopped red onion)
  • 60g tomato-based pizza or pasta sauce
  • 320g sheet ready-rolled puff pastry
  • 100g grated mozzarella
  • 3 tbsp pesto, vegetarian if needed

Instructions

  1. Preheat oven to 200°C/180°C fan/gas 6. Roll out the pastry and use a small, sharp knife to cut out a large Christmas tree shape, keeping any breaks. Carefully lift the pastry tree onto a large parchment-lined baking sheet.
  2. Spread over tomato sauce, pushing to the edges. Sprinkle with cheese and any toppings. Spread the pesto over the pastry pieces and cut most of it into 1 cm (1 cm) slices using a pizza cutter. Twist and arrange the tree to make "tinsel". Mask stars or other shapes out of any leftover slits, then use them to decorate or bake alongside the tree.
  3. Bake for 20-25 minutes (remove any baked forms after 15 minutes) until the dough is puffed and golden and the cheese has melted. Serve immediately.
